If anyone ever tells you you put too much Peanut Butter on your bread, stop talking to them. You don’t need that kind of negativity in your life.

Hi my name is Mindy and I live in Des Moines, IA and am planning to marry my fiance in September. I've recently discovered a love of running and I am finally realizing that it's time for me to be the best I can be. I also enjoy baking, especially cakes, cupcakes and cookies.
Which can be kinda dangerous for someone like me that has a major sweet tooth. Haha. But I believe that with a little dedication and consistency I will be able to find the right balance between my love of creating sweet treats and making sure I am staying active and eating healthy. :)

I hate it when I eat too much before I go to bed then when I wake up I’m not hungry but I know that if I don’t eat something first thing my whole day will fall apart and I will end up overeating again. Ugh.
I made homemade granola and it’s pretty damn delicious and I just couldn’t stop eating it. I blame my period. I tend to get a bottomless stomach a few days leading up to it. *sighs* Tonight/tomorrow is a fresh start. So starting it right with a good breakfast. :)

Healthy Banana, Almond and Chocolate Ice Cream
Ingredients
- 3 very ripe bananas, peeled, cut into chunks and frozen
- ⅓ cup almond butter (can substitute peanut butter)
- ¼ cup bittersweet or dark chocolate chips
- chopped almond and chocolate for garnish (optional)
Directions
- Place the bananas and almond butter (or peanut butter) into the blender. Begin blending and quickly increase speed to high. Once everything is slightly combined, stop and add the chocolate chips. Turn the machine back on and again increase the speed to high. In about 10-30 seconds, the sound of the motor will change and mounds should appear in the mixture. Stop machine immediately or melting can occur. If using a food processor: In a food processor combine the bananas and almond butter. Process until almost smooth. Add the chocolate chips and process until well combined.
- Scoop into bowls, top with chopped chocolate and almonds, if using, and serve immediately.
Serves two to three.
Note: You can also freeze the mixture to get a harder ice cream, but you may have to let it sit out and thaw for a minute or two before you’ll be able to scoop it.
